Baked Zucchini
I love zucchini. Every recipe with it – it’s always my favorite one.
Here you can see the simplest way to prepare that tasty and healthy vegetable. I baked it recently, but now when it’s getting hot outside, I am making it on the grill – and it’s even better.
If you never tried it before – it’s worth taking a risk. Great taste, fast and easy preparation make it an awesome side dish for any dinner, lunch or party.
Ingredients:
Fresh Zucchini
Olive oil
Your favorite seasoning (I use Trader Joe’s Everyday Seasoning or Italian Mix)
Directions:
- Preheat the oven to 375-400°F
- Wash the zucchini
- Cut into halves or thick slices
- Place in a baking tray
- Coat the top with olive oil
- Sprinkle with spices
- Bake for 10-15 minutes, depending on how soft you want it to be
- Enjoy!
Zucchini is one of my faves, I’d like to try this one for a party appetizer.

I love Zucchini too – I cut my slices a little thinner when I bake it in the oven – comes out so yummy :)

I never thought of baking Zucchini cos I enjoy it being fresh and raw and I might have a try for this recipe.
I have found that it is refreshing to make the simple things every once in a while too. I have not tried plain baked zuchini before… at least not that I can remember. Will have to try this.
I am not a zucchini fan but that looks nice and healthy. Plus there are tons of benefits to olive oil. I put it on everything!
